Maui Fish Tacos
Maui fish tacos and delicious and healthy! This is a quick meal to prep and can be made spicy with your favorite salsa. Add a dollop of cold Greek yogurt on top of your sizzling fish for added flavor! They will taste so good, your taste buds wont believe that what you are eating is actually healthy. Time to eat yourself thin with omegas and drops of lime!
Adobo Seasoning, use as desired
1 large tomato diced
½ red onion diced
1 cup of fresh cilantro
8 corn tortillas
First make your pico de gallo. Mix onion, tomato and cilantro. Squeeze an entire lime. You can add diced avocado or save it to garnish.
Lightly spray a nonstick pan. Cook mahi mahi until golden brown.
Cover and cook on low. It should take about 10 minutes.
Cook until fish easily flakes.
Heat your tortillas on a pan.
Add fish and garnish with pico de gallo, avocado and extra lime. Add your favorite hot sauce.
Remember, eat slowly. Chewing is the first step of digestion. Eat one at a time and always remember, you can eat more later…after your workout!
**If you would like to go extra healthy, you can grill the fish and use long strands of romaine lettuce instead of corn tortillas. Remember, this is fuel for your workouts. Don’t be afraid of the calories. Just stop when full.
